Recipe: GLUTEN-FREE KEY LIME PIE


CRUST
2/3 c almonds, ground
2 T sweet rice flour
1/3 cup bobs red mill gluten free ap flour
5 T butter
1/4 c sugar

Mix ingredients together. Roll out/spread out on the bottom and sides of a 9 1/2 " pie plate. Fork bottom. Bake 15 min @ 375F until golden brown. Cool.


FILLING
2 14oz cans sweetened condensed milk
3/4 c key lime juice
2 eggs

Mix together in a bowl. Fill pie with mixture. Bake @ 325F for 15 minutes. Raise the temperature to 375F and bake for another 5-10 minutes. Cool.


TOPPING
2 T sugar
1 cup sour cream 

Mix sugar and sour cream together. Top cooled pie with the mixture. Garnish with lime zest.
