Recipe: Raw Cacao Maca Truffles


Calling all chocoholics. And nut butteraholics. And anyone who wants a nutrient-packed snack that will satisfy your sweet tooth and power your afternoon yoga session. Good news! In 20 minutes you can have your own supply of some amazing afternoon pick-me-ups, no venti Americano required. 

Maca root is an ancient Peruvian superfood that boosts energy, increases stamina, and nourishes the endocrine system. It's packed with vitamins, minerals, and amino acids, including vitamins B1, B2, B, C, D, E, iron, potassium, copper, magnesium, selenium, phosphorous and calcium. Maca is also a fiber-rich food, and a great source of plant-based protein.

Cacao is another superfood that's an excellent source of iron, magnesium and fiber. This wonderful substitute for processed cocoa is also one of the best dietary sources of antioxidants found in nature! Additionally, cacao contains the alkaloids phenylethylamine, theobromine, and anandamine, chemicals that make you feel happy. The rich chocolate taste doesn't hurt in the happiness department, either. 

Add a little cinnamon, vanilla, and some heart-healthy almond butter and these truffles are sure to make you smile — with some coconut on top.

Ingredients:
  • 1/2 cup maca powder
  • 1/2 cup raw cacao powder
  • 1/4 teaspoon Himalayan salt
  • 1 teaspoon cinnamon
  • 1/4 cup almond milk (coconut is great, too)
  • 1 cup raw almond butter (or your favorite nut butter)
  • 2 teaspoons vanilla
  • 3 tablespoons raw honey
  • 1/3 cup unsweetened shredded coconut (optional)

Directions:

Combine all ingredients (except coconut) and blend in food processor until smooth. Remove by spoonfuls and roll into balls. 

Spread coconut on a flat surface and roll balls until evenly coated. Store truffles in fridge, and lace up those sneakers!
